Superfood bircher brekkie

Hands up who loves a good Bircher muesli? 

I do, and so does Valentina (my gorgeous 2 year old foodie babe).  This is one of my favourite week day brekkies, it's filled with superfood goodness and is delicious warm or cold.  You can also get organised for the week, as this recipe makes up to 6-8 servings and keeps in the fridge for 4 days.  

Yay! No more stressy mornings, a healthy and yummy brekkie for the whole family sorted.

Quick note: you can replace any of the spices, seeds, dried fruit or nuts with ones that you love.  This is suitable for foodie babes 2 years+.  If younger, please grind the seeds and nuts finely.  


Makes 6-8 servings/Preparation time: 15 minutes 


1 cup rolled oats/quinoa

1/4 cup chopped almonds (finely/chunky dependent on the age of your children)

1/4 cup chia seeds

1/4 chopped pumpkin seeds (finely/chunky dependant on the age of your children) 

1/4 cup chopped dried apricots

1/4 cup chopped prunes

1/4 cup sultanas

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1 litre almond milk (or whichever you love eg: coconut, cow's milk)

1 grated apple (add in the morning)

6 tablespoons of yummy pro biotic yoghurt (we love the Collective)


1. Place all the dry ingredients into a large bowl or a large lidded container and mix together.  

2.  Add the spices and almond milk, cover and place in the fridge to activate overnight.  

3.  Next morning, add the grated apple and mix through the thickened bircher.  ( I find the bircher really thickens up on the second morning)

4.  Quantity suggestion: Little foodie babes: 2-4 tablespoons topped with 1 tablespoon yoghurt. Big foodie babes: just go for it :)

Soaking the seeds overnight 'activates' them.  It makes the nutrients a lot more readily available and actually increases their nutritional value.  Plus, they go super soft, which makes them easier for our little foodies to eat and digest.
